Cookie Swap Cookie


I am invited to a Cookie Swap in December so I need to bake, from scratch, 13 dozen cookies to share and sample with other attendees. After searching many recipes and websites I found this one, Andies Candies Cookies.

I love these candies and so do my kids. They're the kids arguing at The Olive Garden, over who is going to get the last candy. Yes, those are my kids.

I thought I better try them before I hand them out to other bakers. My reputation is on the line.

I know that you are saying, "what reputation?"

You're right, let's move on.

These are Andes Candies


Ingredients:


3/4 cup butter or margarine

1 1/2 cup brown sugar

2 Tablespoons water

2 eggs

2 cups chocolate chips

2 1/2 cup flour

1 1/4 teaspoon baking soda

1/2 teaspoon salt

3 boxes Andes Candies

Directions:

In sauce pan over low heat, melt butter; add sugar and water. Then add chocolate chips. Stir until partially melted. Remove from heat; stir, then cool for 5 minutes. Add eggs and dry ingredients; mix with a mixer on low speed until blended. Chill 1 hour. Make into little balls and and bake on an ungreased cookie sheet at 350 degrees for 10 - 13 minutes. While still hot, put Andies candy mint on each cookie, let it get soft then swirl mint with spoon. Cool on baking rack.



Makes approx. 10 dozen.

I am going to have to make a couple of batches to get my 13 dozen.



They taste like the "Brownie Cookies", Thin Mints, so if you love those, this is the recipe for you.
Don't make these cookies in January though. That's the month that I'll be hitting you up to buy Thin Mints from my little Brownie.

I sent some over for my neighbors to try. They loved them and said they would be my "guinea pigs" anytime.

My husband and little people gobbled them up as well.

There, proof that I did bake them and that they were good!
